Gathering of olives starts at the beginning of harvest season only by hand, with strict selection of olives. To produce 1kg of this oil it is necessary 30% more olives than for usual oil, because we use only green olives. We call the process “24 hours”, as the collection of olives, oil extraction and storage occurs within 24 hours, which allows us to keep a low acidity, rich flavor, peppery taste of fresh olives and all health benefits of the substance. It is recommended to use in all meals, creating a delight sensation.
